DVR incomplete recordings
I am attempting to watch several programs which I recorded 3-6 weeks ago. About 1/3 of them run for 3-20 minutes (into a 60 minute program) and quit. The display show them as 100% "watched". Restart goes no further. I pay extra for extended DVR capacity, an apparent waste of money. The AI assistant is no help, and I cannot find a way to reach a human being.

Here are some steps you can try to resolve the issue with your Xfinity DVR recordings:
Restart your DVR: Unplug your DVR from the power source, wait for about a minute, and then plug it back in. This can sometimes resolve temporary glitches.
Check recording settings: Ensure that your DVR is set to record the full duration of the programs. Sometimes, adjusting the start and stop times can help. You can do this by:
Pressing the Xfinity button on your remote.
Highlighting "Saved" and pressing OK.
Highlighting "Scheduled" and pressing OK.
Selecting the program to modify and pressing OK.
Highlighting "Record Options" and pressing OK.
Highlighting "Modify" and pressing OK.
Adjusting the start and stop times as needed.

I have this same problem, especially when recording the food network. I'll watch 10 or 15 minutes of a program, then it will just stop and tell me I've reached the end of my program and ask to keep or delete.
two soltutions: fast forward at the fastest speed past the point where it would stop playing. you might miss a minute or so of the show, but can watch the rest. the better option is to go to the xfinity stream app and watch your recorded show there. I either watch on my tablet or just cast to the tv. for whatever reason the flaws in the dvr recording don't carry over to the app.
