 - which led me to https://www.stg.xfinity.com/yoursubscriptions
 - which led me to https://www.xfinity.com/digital/entertainment-management/internet
 - Stuck in a loop.
Second option: xfinity.com/activate-peacock
 - "We’re sorry, your account isn’t eligible for this Peacock offer"

As a Platinum member, that offer would not be available. To see if Peacock was included in your Internet promotion by reviewing your customer agreement. It may be shown on your PDF bill as a discounted feature below your plan description. 

Do you see Peacock listed in either of those areas when you check?
