This happened to us as well, missing a ton of random channels on the stream app (desktop, mobile app, and tv app) but we had them through the cable box. Sounds like a stupid obvious fix but once we signed out on the TV and reauthorized it, it was restored.
Me too. I have been missing a ton of channels since yesterday. I tried signing in and out, reauthorizing, and calling Xfinity. So far, there is no solution. It was happening on my Fire TV Stick 4K, my Fire TV, and on my Android phone. I was directed to regular customer service. The agent was very nice, but I don't think first tier support is really trained on issues and resolutions for the app.

are you able to sign in on the iphone? using the exact same username/password as on the ipad? are you on your home wifi? what menu is not working?
