Why Do Slow WiFi Speeds Occur With Gig Internet Speed

I have the Super+ More package which includes the Gig Internet speed.  Yet a few days a month our speeds are very slow.  Normally the broadcast is between 400-500 Mbps, but this morning it was 49 Mbps.  I have the 3 pods relaying the broadcast. Three of us work from home and connected via VPNs.  I restart the Gateway/router to obtain the desired faster speed.  But is there a setting or option to enable to prevent this?  I am paying for the speed but 300+Mbps gap is huge!  Any advice is welcomed.  Thank you.
