Is the XB7 a Wifi 6 AX gateway? What speed maximum is it capable of?

Yes, the XB7 is WiFi 6 (802.11 ax) compatible. I’m not sure what the maximum WiFi speed achievable on it is but between my MacBook Pro and my iPhone 12 Pro Max, I’ve had it as high as 800 Mbps download.
