Intermittent Slow upload speeds with NetGear CAX30

Hey All, been having this problem ever since I moved to my new house around 3 months ago. It originally started with my Arris SBG10, everything would be fine until randomly my upload speeds would completely tank to less than .1 mbps while my download speeds stayed consistent. I switched to a Netgear CAX30 to try to remedy the problem with no luck, I see the exact same problem (intermittently, around 5-10 times per day) with the brand new modem. I've already had one xfinity technician come out here and say everything is fine. I've also confirmed that there are no splitters, filters, or amplifiers stemming from the line directly plugged into my house from the pole. There is one extender(idk what its called just a single female to female coax connector) going through a box on the outside of my house. Any help would be greatly appreciated!

For additional context, every red line here is a point in which my upload speeds completely tank and I drop my work video calls/remote desktop sessions. This is ridiculous, I can't WFH at all.

Updated upstream bonded channels after I had the advanced tech come out and replace the entire coax line coming into my house. Upstream channels are still ridiculously high causing my upload speeds to drop tremendously.
