Adding Channel Favorites on Xfinity Stream
I found, To set up favorites on the Xfinity Stream app. Go to the Xfinity website or on your mobile device with the Xfinity Stream because the "Favorite" is limited or unavailable on the streaming device.
Once there the star is shown on the guide. Once you add the Favorite on website or mobile device, it will add the same to all stick devices on your account.
This has been very frustrating that I could not find this information on the Xfinity forum.

22bad4u2 Howdy! Are you attempting to access the favorites on a Roku? Setup wise, what device are you using to set up the favorites?

I agree that it's super disappointing xfinity doesn't make these simple tasks more readily known. The streaming app is a low grade app to begin with. It's amazing and frustrating how a company as big as comcast with their billions of revenue can't build or buy a quality streaming application. The fact that on many tv's you can't even save a channel as a favorite says a lot.
