"Recover Deleted Items" has very unexpected result

Today, I clicked "Recover Deleted Items" for the first time. I wanted to see if I could find copies of some sent emails. I expected to see things from the last 30 days since that's what it says will be displayed. BUT - instead, it shows me EVERYTHING going back to 2017 and beyond. How can that be?
