Second eSIMs

My unlocked Samsung A35 has Xfinity Mobile on an eSIM.  I was planning to go to Europe and purchase another eSIM there just for data.  How do I set up to receive and make calls with Xfinity but no data.  Data is will be on new eSIM.  Does this automatically happen?  A little confused on the setup.  Thanks.
