If you have an X1 TV Box or Flex/Xumo Stream Box, you can cancel Paramount Plus by going to Settings > Apps & Subscription Management, then select Paramount Plus. From there, you would just need to select Change Plan > Unsubscribe, then Unsubscribe again to confirm. If you are not seeing the Paramount+ under your subscriptions, it could be that it would be signed up directly with Paramount+ and I would suggest reaching out to them directly. Xfinity and Paramount are apparently working together to keep from cancelling the Paramount subscription. Each entity sends the customer to the other service provider to initiate cancellation. Neither of which allows you to cancel. Nice scam. Well done Paramount and Xfinity!!
