I'm remembering back to when I had some finnicky legacy camera pairing issues - one other thing to try is to reboot the Gateway and then the Touchscreen in between pairing attempts, defaulting the camera each time.
The Touchscreen can be rebooted from the My Account app. Go the the Xfinity Home section and choose Troubleshooting.

Your suggestion to reboot the Gateway and the Touchscreen is one I haven't ever tried. FYI, I have the Orbi router in additon to my XB7, so rebooiting is more complicated, but not difficult and is something I have done snce I get the Orbi (I got it while I had the XB6).
