My iPhone 7 and my wife’s iPhone 8 are connected to my network but neither one is showing up in my xFi app as connected.

If you are saying they are in the xFi app as not connected, I wouldn't worry about it if they are connected to your Xfi SSID with the correct password.

Hi @cke, we are aware of the issue in xFi reporting incorrect device status (Connected vs. Not Connected). We are working on addressing the issue and hope to have it fully resolved as soon as possible.
