RNG 150N/TV headphone connection w/o affecting normal volume?

I have an RNG 150N box. My wife wants to listen to TV audio through headphones (while I try to sleep). The TV is a Hitachi L32A403, which has it's own RCA audio output jacks. They are connected by an HDMI cable.

I already know I will need an RCA-to-3.5mm adapter, whether the audio comes from either the Comcast/Xfinity box or the TV.

Can I adjust the audio levels on the cable box seperately from the TV or is there a better way to do this? Of course, I'd be VERY happy if the TV's speaker was muted or a low volume (i.e. unaffected by however we control the normal TV volume).

Many thanks for your help!
