How do I increase the time a recording can be paused before it kicks off?

no setting for that. hit exit and then last button if same set top box or via 'for you' if on a different TV.

On our previous DVR, we could pause a recorded show indefinitely. I just switched it out for a new box and now we aren’t able to do that. After about 5 minutes of being paused, it returns to live tv. Is this something that changed with newer boxes? And no way to change this setting?

begging the question of why not just hit exit and use resume... you may be playing a cloud DVR copy of the program on your home X1 set top box and it won't allow long pauses (same as on-demand programs).
