After you create the folders you want, you would need to use filters to send incoming messages to them based on a variety of criteria.  If you are still on the old email format, from the Inbox page go to Preferences>>>>>Email>>>>>>Email Filters.  If you are on the new format, from the Inbox page click on the gear icon in the upper right-hand corner of the screen, then on Settings>>>>Mail>>>>>>Filter Rules.
