I am changing a friend's (Bob), email address.  I added the new email address as a separate entry, then I deleted the original address.  Now when I go to send a new email, I type in Bob and it brings up only the email address that I just "deleted", not the new address.  What am I doing wrong?  This happens every time I delete an address, it will bring the old one in the "TO" address when I want to write a new email.

You are not doing anything wrong.  This is yet another of the flukes sometimes caused by using an address book that is not provided by the same people as the email software.  

 

The auto-complete feature in the Comcast address book has it's own memory.  You can't access it or alter it.  Periodically Comcast will re-set accounts, and at that time entries that have been deleted from your address book should vanish.  However, they only do that sporadically, on no particular schedule.  So those old addresses could keep popping up for quite a while.  In the meantime, try having the address book re-synced. You need to send an email to helpme@sv.comcast.com In the subject line put "Need Slow Sync of Address Book". In the body of the message describe the problem, and make sure you include the email address with the problem. It can take up to 24 hours for the re-sync to work.

The address book is actually supplied by a company called Plaxo. The email program is provided by Zimbra.  Comcast doesn't write their own.
