How do I go as far back as a year on my inbox in email?

Assuming you are using only the webmail and not an email client like Outlook or Windows Live Mail, it depends on how you have your deletion schedules set.  From the Inbox page go to Preferences>>>>>Email>>>>>>>Email Deletion Schedules and see how you have it set.  You have several options up to and including Never to delete.
