why is there not a more easier way to block junk mail

why is there not an easier way to block spam mail or email that you do not want.  I know with my Mom's aol account if it is not in the address book then it does not go through.  Yours does not make any sense because 1) I can not find preferences at the top of my page 2) The safe mail list does not exactly explain how to add all the addresses in your address book and finally 3) the email filter you have for spam or junk mail is not an easy direction to figure out once you finally have someone tell you how to get there.  Why can't it be set up more like Outlook and you used to just right click and then hit block or mark as spam and then it was gone.  There has got to be an easier way to solve this.
