Somehow, my inbox is suddenly not retaining emails beyond a very short period of time or number of emails.
Settings does not seem to include a place to change that.

There is no setting to change retention in the new format.  Emails should be kept indefinitely until you delete them.  The only exceptions are the Spam and Trash folders.  Do you have the account enabled on another computer or mobile device using POP3?  If so it may be downloading the emails and then deleting them from the server.

I am having the same exact issue. I have a laptop with Office 2013 using IMAP and an Iphone set us as IMAP. When I log into WEBMail there are only 45 days worth of messages in the inbox. Yet the emails in subfolders go back months and months. On my phone 6+ it goes back to 1-17-108 with one straggler email form 12-15-2017....make no sense why a gap 1 month.

Yes, I find I do have POP on my tablet, but I haven't used it for weeks. In the past, I had the server set to retain email for several weeks, even though downloaded. Now my new desktop is other than POP and I find that since emails are not kept on the device, if they are not on the server, I'm loosing alll emails other than two weeks old, both on the server and on the desktop. I'm thinking of switching the desktop to POP, hoping to retain emails on the desktop.

I'd love for them to be kept on the server for a long period of time, but don't know how to accomplish that. (I have plenty of room.)

What you need to do is enable the account on both the tablet and the computer using IMAP.  That way everything is synced.  Most mobile devices now will auto-configure an email account using IMAP.  Your desktop client may or may not depending on which one you are using.
