I am having trouble editing/creating email filters.  There doesn't seem to be a way to set up a filter so that the email goes to a subfolder.

Assuming you are in the new email format, when you are setting up the rule and you click on "Add action", you would click on "Move to folder".  Then you should see a window with the ability to navigate to whatever folder you want to use as the destination.  It looks like this--------------

If the sub-folder is a local one it should be under "My folders".
